Muscle and Serum Metabolomics for Different Chicken Breeds under Commercial Conditions by GC–MS

Globally, village chicken is popular and known as a premium meat with higher price. Food fraud can occur by selling other breeds at price in local markets. This study aimed to distinguish from available the market, namely, colored broiler (Hubbard), (Cobb), spent laying hen (Dekalb) pectoralis major serum under commercial conditions using an untargeted metabolomics approach. Both were analyzed gas chromatography–mass spectrometry (GC–MS). The principal component analysis (PCA) results distinguished four different into three main groups for serum. A total of 30 40 characteristic metabolites identified serum, respectively. characterized abundance such amino acids (L?glutamic acid, L?threonine, L?serine, L?leucine), organic (L?lactic succinic 3?hydroxybutyric acid), sugars (D?allose, D?glucose), sugar alcohols (myo?inositol), fatty (linoleic acid). Our suggest that approach GC–MS PCA could discriminate conditions. In this study, only be (Hubbard) samples.
